is there any way to create an invoice through admin? I sell "in-store" as well as "online" so if a customer comes into my shop to buy something that is available online I would like to create an invoice without going through the process of placing an online order, but I still want inventory levels controlled.

That would need a custom module of coding to do that, if you send me a spec of how you would want that to work I can produce a quote.
